[WATCH] Armagnac butter

Watch Sean Gravina make an Armagnac butter, perfect to add to parfaits or to use in baking for a little bit of added flavour for grown ups.

Sean Gravina makes an armagnac butter to seal a duck liver parfait
Armagnac butter

  • 125g butter
  • 1 tbsp Armagnac

  1. Melt the butter in a saucepan, without letting the butter foam.
  2. Add the Armagnac, or any other liqueur, and mix until combined. The mixture should be creamy, like a thick milk.
  3. Use with pates and parfaits or in baking.
