RECIPE | Mexican guacamole for Cinco de Mayo

Get in the kitchen and whip up some guacamole like a Mexican with a recipe from Sebastian De La Fuente, Malta’s own local Mexican.

The internet has opened many doors, one of which is of a culinary nature. Although few Maltese people knew why Cinco de Mayo was celebrated and where before easy access to the internet, today we have access, not only to history from around the world but great tasting recipes used by locals to celebrate their own special days. Though you might not feel the need to celebrate Cinco de Mayo for the right reasons, you’ll definitely want to celebrate this guacamole recipe.

Mexican cuisine is characterised by a number of ingredients, the avocado, the lime and jalapeño peppers. Guacamole is so true to its Mexican roots that the ingredients, aside from the avocado are the same colours of the Mexican flag; green – chili, white – onion and red – chili.

Guacamole

Ingredients

  • 2-3 ripe avocados
  • 2 small tomatoes, chopped
  • 1 tbsp onion, finely chopped
  • 1 tsp crushed garlic
  • 1 ½ tbsp fresh coriander, finely chopped
  • ½ tsp ground cumin
  • 1 lime, juice only
  • Salt and pepper

Method

  1. Mix the tomatoes, the onion and the garlic.
  2. Add the avocado and smash it with a fork, or preferably with the hands. It should stay chunky.
  3. Add the fresh lime juice.
  4. Add the cumin, coriander, salt and pepper and mix well.
  5. Garnish with coriander.
  6. Serve with tortilla chips.

Tips:

Leave the bone of the avocado in with the guacamole as it helps also to keep its green colour.

The lime juice will stop oxidization of the avocado which will stop the avocado turning brown.
