Cucumber Raita

  • 1 small cucumber, peeled
  • 350g Greek yoghurt
  • 5 tbsp chopped mint


  1. Cut the cucumber in half lengthways, scoop out the seeds and cut the flesh into small cubes. 
  2. Place in a bowl with the yoghurt and mint and chill.
