Roasted strawberries 'n' cream popsicles

Strawberries and cream are simply delicious. Roasted strawberries in balsamic vinegar topped with cream give you a little extra richness. And in this heat why not put them on a stick and freeze them? Whether you're serving these as an after dinner treat at a dinner party or for that naughty mid-afternoon snack, these popsicles are delightful

Makes 8 ice lollies


  • 1 punnet fresh strawberries
  • 4 tbsp balsamic vinegar 
  • 1 tbsp maple syrup 
  • ½ tsp salt 
  • 2 tubs fresh cream 


  1. Preheat the oven to 180°C. 
  2. Halve the strawberries and place in a single layer on a baking tray lined with baking paper. 
  3. Drizzle over the balsamic vinegar and roast until soft and fragrant (approx. 20 mins). 
  4. Allow to cool in the pan for 10 mins before transferring to a separate bowl. 
  5. Add the maple syrup and the salt and mash with a fork leaving some chunks of fruit. 
  6. Allow to cool to room temperature. 
  7. Place a tablespoon of fruit into the bottom of the mould. 
  8. Layer with fresh cream and more fruit. 
  9. Freeze until set (approx) 4 hours. 
  10. To remove from the mould, place in warm water for 5 seconds before sliding out of the mould. 
  11. Serve immediately.
