Gin and tonic ice lollies

When you really need a drink but it's so hot outside all you really want is an ice cream, this is the recipe for you. Freeze your G&T in a popsicle mould and you've got an adult-only ice lolly that will satisfy on so many counts. 

Gin and tonic ice lolly

Makes 8 popsicles

Ingredients

  • 4 shots gin
  • Tonic water
  • Cucumber slices
  • Mint leaves

Method

  1. Place half a shot of gun into each mould.
  2. Add the cucumber slices and mint.
  3. Top with tonic water.
  4. Insert a stick into the ice lolly and freeze until set (approx. 4 hours).
  5. To remove from the mould place in warm water for 5 seconds and slide out of the mould.
  6. Serve immediately.
