Deconstructed cheesecake

The Preca sisters take a classic cheesecake recipe and deconstruct it and serve it in tall glasses giving this recipe a new lease of life. 

Deconstructed cheesecake

Serves 4


  • 20 Oreo cookies
  • 2 tbsp butter, softened
  • 200g cream cheese, softened
  • 1 cup icing sugar
  • 400ml whipped cream, in 2 200ml batches
  • 200g dark chocolate


  1. Crush 16 of the Oreos, reserving 4 for topping.
  2. Melt the butter and toss with the cookie crumbs.
  3. Pour the buttered crumbs into 4 tall wine glasses and set aside
  4. In a large bowl, beat the cream cheese with the icing sugar until smooth.
  5. Fold in half of the whipped cream.
  6. Spread over the biscuit layer.
  7. In another large bowl, melt the chocolate and add the remaining 200ml cream.
  8. Crush the remaining cookies and sprinkle over the top. You can use any other toppings you like. Try nuts, candied fruit and chocolate bit.
  9. Cover and chill for at least 3 hours.
