Phoenicia launch a “True Taste of Summer”

Hotel Phoenicia has launched its summer menu, “A True Taste of Summer” as they make the move to al fresco dining in the 7.5 acres of gardens for the summer season ahead.

For the last few months Executive Chef Saul Halevi and Food & Beverage Manager Francesco Perricone have been busily working on the venues, innovating core menus, and re-inventing old favourites to provide a tempting set of summer culinary pursuits. The dining landscape at Phoenicia has changed considerably, with multiple new attractions, including a Mediterranean kitchen concept that influences everything produced in all the landmark property's outlets, based on a 4000 square metre kitchen garden to bring fresh food into play in exciting new ways.

With lovely new menus for the summer season, Phoenicia has created an intriguing summer schedule that combines foods, styles, entertainment, refreshing drinks, atmosphere and elegant relaxation. Weekends kick-off from Friday 7:00pm with Malta's first ever Wine Buffet, designed to allow patrons to enjoy the start to their weekend on a Friday evening with unlimited sampling across a vast array of wines while nibbling some tasty bites. Paired to the wines is well known singer William Mangion, his sets feature both familiar tunes as well as some new material, adding an additional dimension to Palm Court's buzzing Wine Buffet from 8:30pm.

Saturday Night in the hotel's iconic Club Bar, often described as the Phoenicia's best kept secret, hosts Godwin Lucas who plays mellow and romantic classics to complement the 26 malt Scotch whiskies, various Irish whiskeys, as well as multiple Kentucky and other bourbons. During summer the doors are thrown open to the terrace with panoramic views over the Mediterranean, the perfect romantic location to gently dance the night away in the moonlight with wafts of jasmine floating on the summer breeze.

New this summer is The Sunday Grill, a fabulous family grill evening that includes a wide range of treats full of authentic barbeque classics in the form of an incredible buffet that offers an abundance of favourites, from tasty starters and satisfying main dishes to mouthwatering desserts. Live entertainment comes in the form of bass and guitar duo Tony Polidano and the stylish Richard Edwards, whose music is instrumental to the pleasant summer atmosphere.

On Tuesdays the alluring Phoenix Terrace is the refreshing venue for an Italian night featuring a delightful aperitivo bar offering classic Italian drinks like Aperol, Campari, Mimosa, Bellini, Americano and one of the island's best Negroni cocktails, twinned to a live pasta station with a full-on pasta experience producing fresh sauces a la minute. Edmund Zarb on piano will be reinforcing the Italian mood with a repertoire that adds to the tricolore ambience.

A Maltese Night to remember every Thursday to share with friends from abroad. Authentic Maltese food al fresco to the traditional sounds of Tony Pace rendering laments and joy from his guitar. Traditional Maltese food is rustic and based on the seasons, and Executive Chef Halevi's award-winning brigade of chefs have transformed a number of humble dishes into timeless classics for the most discerning palate.
