Strawberry and pine nut chutney

Say yes to a real fresh fruit chutney and no to all those unnecessary preservatives and refined sugars found in most store bought jams.

Serves 2

Ingredients

  • 150g strawberries
  • 25g vinegar, balsamic
  • 50g soft brown sugar
  • 50g onions
  • 20g extra virgin olive oil
  • 20g pine nuts
  • 25g raisins
  • 4g salt

Method

  1. Add the olive oil to a pan and bring up to a low heat. Finely chop the onion into small cubes and add them to the pan along with some salt.
  2. Cook the onions on a low heat till they are soft and translucent and then add the pine nuts. Keep on stirring till the pine nuts brown a little.
  3. Cut the strawberries into large cubes and add them to the pan, keep on stirring the pan till most of the liquid from the strawberries has been drawn out.
  4.  At this point add the sugar, vinegar and raisins.
  5. Reduce this mix till a thick saucy consistency has been achieved. Leave to cool at room temperature.
  6. Once cool serve with some toasted bread and a selection of cheese.
