Chickpea loaf

A versatile vegetarian dish

Ingredients:

  • 1x tin 400g chickpeas
  • 3 red/yellow peppers
  • 2 eggs, beaten
  • Handful of coriander, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp fenugreek
  • 1 tsp curry powder
  • Pinch of chilli flakes
  • Black rice, cooked according to instructions.

Method:

  1. Roast peppers in an oven till soft. (190° for 30 minutes)
  2. Drain chickpeas and use a hand blender to mix into peppers.
  3. Add in chopped coriander and spices and eggs.
  4. Pour mixture into an inch-deep baking tray / bread tin
  5. Bake in the oven at 190°for 30-45 minutes / until firm to the touch.
  6. Cut into oblongs and serve, fanned, on black rice.
