Maltese pizza

Fresh local ingredients really give this pizza a little something special

Ingredients

  • 100g tomato sauce
  • 1 Maltese sausage 
  • 4 – 5 sundried tomatoes
  • ½ an onion
  • Handful black olives
  • 1 gbejna
  • 100g mozzarella 
  • Handful rucola

Method

  1. On a floured surface open up the pizza dough with your hands. If you are confident enough, throw the dough into the air to make 12-inch diameter circles.
  2. Pour a ladle-full of tomato sauce on the centre of the pizza base and spread outwards in a circular motion until the entire base is covered. 
  3. Top with mozzarella cheese.
  4. Remove the meat from the sausage skin and discard the skin. 
  5. Place Maltese sausage around the pizza followed by onions, sun-dried tomatoes, olives and chucks of gbejna. 
  6. Cook in a hot oven at 250°C for 20 – 25 minutes. 
  7. To check if the pizza is ready raise one side of the pizza. When the bottom surface is light brown the pizza is ready to come out of the oven. 
  8. Top with rucola and serve.
