Baked Barracuda with a mushroom and prawn stuffing
Serves 4
Ingredients
- 1 kg barracuda, filleted
- 200g small prawns, peeled
- 150g mushrooms, chopped
- 1 small onion, peeled and finely chopped
- 2 cloves garlic, peeled and finely chopped
- Parsley, chopped
- Salt and pepper
- 2 glasses dry white wine
- Olive oil
- 3 bay leaves
Method
- To prepare the filling simply mix the prawns with the mushrooms, add the onion and garlic. Season with salt, pepper and parsley.
- Lay one fillet of the fish in a dish. Season and fill with the stuffing. Lay the other fillet on top.
- Add the white wine, olive oil and bay leaves. Cover with foil.
- Heat oven to 200°C and bake the fish for about 20 mins.
