Warm chicken satay salad
Better eating with Goldie
Serves 4
Ingredients
- 1 yellow pepper, sliced lengthwise
- 1 orange pepper, sliced lengthwise
- 8 cherry tomatoes, halved
- 1 large chicken breast, cut into 2.5cm strips
- 1 jar peanut butter
- 200ml coconut milk
- 1 tsp ginger, grated
- 100g sweet corn
- 4 tsp sweet chilli sauce
- 1 tsp sesame seeds
- 1 tbsp olive oil
- 400g mixed lettuce leaves
- Salt and pepper
- 1 spring onion, sliced
Method
- In a bowl mix peanut butter, coconut milk and ginger and set aside.
- Heat olive oil in a pan and add chicken strips and add seasoning.
- Cook for 5 mins or till slightly golden brown and cooked through.
- Add hot chicken to satay and mix well till all pieces of chicken are coated in the sauce.
- Plate lettuce and cherry tomatoes, top with satay chicken in the centre and add, peppers and corn.
- Drizzle sweet chilli sauce over the top and garnish with spring onions and sesame seeds.
