Pork fillet with sweet mince and apple

Nothing says Christmas like mince pies. However the mince mixture is also great in savoury dishes, particularly with pork. Try Micheal Diacono’s recipe for pork fillets stuffed with mince and apples for a truly delicious festive dish. 

Pork fillet with sweet mince and apple

Ingredients

  • ½ apple, diced
  • 1 jar mincemeat
  • 1 handful almonds
  • 2 slices bread
  • Salt and pepper
  • 3 sprigs thyme
  • 2 pork fillets
  • 1 sprig rosemary
  • 250ml Benna fresh cream

Method

  1. Mix the diced apple, mince, almonds.
  2. Place the slices of bread into a food processor and blitz until they form fine breadcrumbs.
  3. Add the breadcrumbs to the mince mixture.
  4. Season with salt and pepper, add the thyme and mix well.
  5. Open up the pork fillets and season with salt and pepper and fill with mince mixture.
  6. Roll the pork fillets and seal with butcher's twine.
  7. Fry in a pan with melted butter and olive oil until the pork fillets are coloured on all sides (approx. 5 mins).
  8. Place in a roasting tray with a chopped onion, rosemary and fresh cream.
  9. Roast in the oven at 200°C for 30 mins.
  10. Allow to rest for 10 mins before slicing.
  11. Remove the butcher's twine and serve in slices with the cream sauce from the roasting tray.
