Penne with salmon, apple and walnuts

Pasta and salmon is a firm favourite among the Maltese. Michael Diacono gives this dish his own twist. He ditches the cream and uses apple and walnut for an interesting pasta dish that will get your friends talking. 

Penne with salmon, apple and walnuts

Ingredients

  • 200g walnuts, roasted and finely chopped
  • 1 leek, finely chopped
  • 1 clove garlic, finely chopped
  • 1 apple, peeled, cored and finely sliced
  • 200g salmon
  • Handful parsley

Method

  1. Cook the pasta according to the packet instructions.
  2. Fry the leek in a little olive oil for a few mins until soft with the garlic.
  3. Add the apples and the salmon and season with salt and pepper.
  4. Add the walnuts and stir.
  5. Add a little bit of water from the pasta pot and allow to simmer for a few mins.
  6. Add the parsley.
  7. Add the penne to the sauce just before the pasta is ready and allow to finish cooking for approx 1 min in the pan.
  8. Serve with a few walnuts and some more parsley as a garnish.
