Asian chicken legs in Coca-cola

These chicken legs are slow cooked in soy sauce and sugary Coca-cola leaving them full of flavour and falling off the bone. The Preca sisters share this easy recipe.

Asian chicken legs in Coca-cola

Ingredients

  • ½ cup soy sauce
  • 200ml Coca-cola (you need the sugar so don’t use diet)
  • 6 chicken legs, bone in
  • 2 cloves garlic
  • 1 leek, chopped
  • 100ml chicken stock
  • Basmati rice
  • Spring onions, to garnish

Method

  1. Pre-heat the oven to 180°C.
  2. Heat some oil in a pan and gently fry the leeks on medium heat, making sure they do not brown.
  3. When the leeks are soft, add the garlic and cook for a few mins.
  4. Add the chicken legs and fry on both sides until golden brown.
  5. Add the soy sauce and the Coca-cola and allow to cook for a min or so.
  6. Add the chicken stock and place in the oven for approx. 1 hour until the liquid has reduced and the chicken is falling off the bone.
  7. Remove the chicken from the pan and place the pan back on the hob. Allow the sauce to reduce until it thickens.
  8. Serve the chicken over rice with some of the thick sauce and fresh spring onions.
