Candy cane cookies

Nothing says Christmas quite like candy canes. Put these into your regular sugar cookie recipe for a little Christmassy twist.

Ingredients

  • ¾ cup sugar
  • 113g butter
  • 1 egg
  • ½ tsp vanilla
  • 3 drops peppermint extract
  • 1 2/3 cups plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp salt
  • ½ cup crushed candy canes

Method

  1. Cream the butter and the sugar until pale and fluffy.
  2. Add the egg, vanilla and peppermint extract and mix well.
  3. Add the flour, baking powder, bicarbonate of soda and salt and mix well.
  4. Stir in the crushed candy canes and place in the fridge for at least 30 mins.
  5. Pre-heat the oven to 180C.
  6. Roll the dough into balls the size of golf balls and flatten a little.
  7. Place on a baking sheet lined with baking paper at least 2 inches apart.
  8. Bake for 8 to 10 mins until golden. Be careful not to overbake as the peppermint candies melt completely and go straight through the cookie.
  9. Remove from the oven and allow to cool on the baking sheet for 10 mins and then transfer to a wire rack to cool completely.
