White chocolate and cranberry cookies

Cranberries get very little love outside the Christmas season. Make the most of it with these cookies paired with white chocolate – perfect to leave for Santa on Christmas Eve.

White chocolate and cranberry cookies

Ingredients

  • 113g butter
  • ½ cup light brown sugar
  • ½ cup golden sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 ½ cups plain flour
  • 1 ½ tsp bicarbonate of soda
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Method

  1. Cream the butter and the sugar until pale and fluffy.
  2. Add the vanilla extract and the egg and mix well.
  3. Add the flour, bicarbonate of soda and salt and mix well.
  4. Mix in the cranberries and white chocolate and put in the fridge for at least 30 mins.
  5. Roll the dough into balls the size of golf balls and flatten slightly and place on a baking sheet lined with baking paper at least 2 inches apart.
  6. Bake for 12 mins until golden around the edges.
  7. Allow to cool for 10 mins on the baking tray, then move to a wire rack to cool completely.
  8. Store in an air tight container for 2 weeks.
