Truffled mushroom and gorgonzola ravioli

Mushroom and truffle ravioli by Ta' Marija
Serves 4
Ingredients
For the filling
- 250g ricotta
- 200g gorgonzola
- Salt & pepper
- Parsley
- Pinch of mutmeg
For the sauce
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 200g mushrooms
- Salt & pepper (to taste)
- Truffle oil (for taste/finishing)
- Fresh cream (optional)
Method
- In a pan over medium heat, sauté the chopped garlic and onions until softened and fragrant.
- Add the mushrooms to the pan and cook until tender.
- Add salt and pepper to taste during the cooking process.
- Once everything is cooked, transfer the mixture to a blender. Blend until completely smooth.
- Stir in the truffle oil to taste.
- Since the recipe doesn't list a liquid, you might find the mixture very thick. If the blender struggles, try adding a splash of heavy cream, vegetable broth, or even just a little water to help it reach your desired consistency!
