Stir fried chicken with cashew nuts

An easy recipe for an Asian favourite

Ingredients:

  • 2 – 3 cloves garlic, finely chopped
  • ½ onion, sliced
  • 1 mushroom
  • 4 ears baby corn
  • 100g cashew nuts
  • 1 large dried chilli
  • 1 spring onion, chopped into 1 inch pieces
  • 50g chicken, chopped into bite sized pieces
  • 2 tsbp cooking oil
  • 1 tsp sugar
  • 2 tsp fish sauce
  • 3 tsp oyster sauce

Method:

  1. Heat the oil in the wok to high heat.
  2. Add the cashew nuts and dried chillies.
  3. Remove from the pan.
  4. Add the chicken and garlic and cook for approx 1 min until the chicken turns white.
  5. Add the remaining vegetables except the spring onion.
  6. Add the sugar, fish sauce and oyster sauce and cook for approx 1 min till the veg has softened.
  7. Turn off the heat, add cashew nuts and chilli. 
  8. Add the spring onions and serve with steamed or sticky rice.
