Olive oil apple cake

An impressively moist and delicious olive oil apple cake that is chock full of apples, raisins and a scent of cinnamon 


  • 384g flour
  • 2 large apples
  • orange juice to soak apples in
  • 1/2 tsp cinnamon
  • 1tbsp baking powder
  • 1tbsp baking soda
  • 170g sugar
  • 2 large eggs
  • 216g extra virgin oil
  • Raisins to your liking
  • Icing sugar for dusting


  1. Chop the apples and place in a small bowl.
  2. Add the orange juice, just enough to coat them.
  3. In a bowl, sift together the flour, cinnamon, baking powder and baking soda and set aside.
  4. In a mixer, mix the sugar and virgin oil until well combined.
  5. Add the eggs and whisk.
  6. Add dry ingredients to the mixer and beat together.
  7. Drain apples and add to the mixer together with the raisins.
  8. Line a cake pan with baking paper and cook for 45min at 180c.
