Duck in chocolate chilli sauce
This rich combination is just delicious!
Serves 2 persons
Ingredients
- 1 or 2 duck breasts
- 1 glass red wine
- 2 blocks of dark chocolate preferably 90% cocoa
- 2 garlic cloves finely chopped
- handful of berries (optional)
- 1 chilli
- 180cl cream
Method
- In a pan lightly fry the garlic and chilli, add the wine, season withsalt and pepper, and let it reduce about 6 mins.
- Add the chopped chocolate and berries and stir.
- Cook the breasts in a separate pan, skin side down over a medium heat until lightly browned. Turnover and cook for a further 5 mins.
- Continue cooking in oven for about 10-15mins depending on taste.
- When the breast is ready, pour cream into wine and chocolate mixture and stir.
- Carve the duck, place over a bed of watercress and add the sauce.
Potatoes
- Blanche the potatoes. When these are ready, coat with some olive oil and roll them in some sesame seeds; saute the potatoes in a pan till lightly browned
- Add a few cherry tomatoes. Continue to sauté until browned.
- Garnish with chopped parsley and garlic, salt and pepper and serve.
