Banana curry

Banana’s are packed with potassium which give energy levels a boost!

Ingredients

  • 5 green (under-ripe) bananas, 1” slices
  • 1 onion, chopped
  • 2 tbsp curry paste
  • 1 can coconut milk
  • 2 tbsp vegetable oil

Method

  1. Fry banana’s till browned on both sides.
  2. Drain and dry on kitchen paper.
  3. Fry onions till translucent.
  4. Add curry paste and bananas to onions and mix well.
  5. Add coconut milk and simmer for 5 minutes.

Serve with rice and poppadums
