Banana curry
Banana’s are packed with potassium which give energy levels a boost!
Ingredients
- 5 green (under-ripe) bananas, 1” slices
- 1 onion, chopped
- 2 tbsp curry paste
- 1 can coconut milk
- 2 tbsp vegetable oil
Method
- Fry banana’s till browned on both sides.
- Drain and dry on kitchen paper.
- Fry onions till translucent.
- Add curry paste and bananas to onions and mix well.
- Add coconut milk and simmer for 5 minutes.
Serve with rice and poppadums
