Chickpea loaf
A versatile vegetarian dish
Ingredients:
- 1x tin 400g chickpeas
- 3 red/yellow peppers
- 2 eggs, beaten
- Handful of coriander, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp fenugreek
- 1 tsp curry powder
- Pinch of chilli flakes
- Black rice, cooked according to instructions.
Method:
- Roast peppers in an oven till soft. (190° for 30 minutes)
- Drain chickpeas and use a hand blender to mix into peppers.
- Add in chopped coriander and spices and eggs.
- Pour mixture into an inch-deep baking tray / bread tin
- Bake in the oven at 190°for 30-45 minutes / until firm to the touch.
- Cut into oblongs and serve, fanned, on black rice.
