Twisted chicken cordon bleu

Ingredients
- 4 medium size chicken breast
- 8 slices Parma ham
- 100g apple wood smoked cheddar cheese – grated.
- 100 wilted spinach leaves
- 75g flour
- 2 eggs
- 150g fresh breadcrumbs
- 75g freshly ground walnuts
Method
- Start by opening the breast into a pocket, flatten the meat & lay down the Parma ham to cover the chicken
- Add grated cheese and wilted spinach on top, close the pocket by overlapping the chicken on the filling.
- Completely cover the rolled chicken with flour then the beaten eggs & finally the mixed breadcrumbs & walnuts. Make sure all edges are properly closed.
- Prepare a hot non-stick pan with some grape seed oil, gently fry the chicken until golden on all sides.
- Put the chicken in the oven at 180°C for 3 mins
