Twisted chicken cordon bleu

Serves 4

Ingredients

  • 4 medium size chicken breast 
  • 8 slices Parma ham
  • 100g apple wood smoked cheddar cheese – grated.
  • 100 wilted spinach leaves
  • 75g flour 
  • 2 eggs 
  • 150g fresh breadcrumbs
  • 75g freshly ground walnuts

Method

  1. Start by opening the breast into a pocket, flatten the meat & lay down the Parma ham to cover the chicken 
  2. Add grated cheese and wilted spinach on top, close the pocket by overlapping the chicken on the filling.
  3. Completely cover the rolled chicken with flour then the beaten eggs & finally the mixed breadcrumbs & walnuts. Make sure all edges are properly closed.
  4. Prepare a hot non-stick pan with some grape seed oil, gently fry the chicken until golden on all sides.
  5. Put the chicken in the oven at 180°C for 3 mins
