Chicken breast roulade filled with spinach and Greek feta cheese
A satisfying dish with a rich combination of Mediterranean flavours. It makes the Perfect Partner to a Macchialupa Greco di Tufo

Ingredients
- 500g fresh chicken breast
- 150g Greek feta cheese
- 150g spinach
- 2 cups chicken stock
- ground black pepper
- 2 tbsp fresh cream
Method
- Prepare chicken breast by creating a pocket in the centre of the breast with a sharp knife.
- For the filling - cook the spinach for a few seconds and drain well. Combine chopped spinach and crumbled feta cheese and insert in pocket.
- Place chicken in shallow oven tray together with the chicken stock, sprinkle pepper and bake for 30 minutes on 230ºC.
Sauce
- Prepare the sauce by combining the chicken stock, diced spinach and fresh cream. Stir on low heat for 5 mins.Place chicken breast in sauce and simmer for 5 mins.
- Slice chicken breast and pour sauce on top.
