Pilau rice with beef and spices
Treat yourself to a taste of Africa on a plate
Serves 10
Ingredients
- 1½kg rice
- 1kg beef
- 1kg potatoes
- 1kg tomatoes
- 2 onions
- 4 cloves garlic
- 3 tbsp vinegar
- 250g cumin seeds
- handful black peppercorns
- 10 cardamoms
- 1 tbsp chilli powder (to taste)
- ½kg peas
- 2 large carrots
Method:
- Fry the onions in hot oil until soft
- Add the beef that has been cut into cubes
- Crush the garlic with some sea salt in a pestle and mortar and add to the beef and leave to simmer for 15 – 20 minutes
- Add potatoes and mix well
- Crush spices (cumin, cardamoms, peppercorns) in a pestle and mortar and add to the saucepan and simmer further
- Add peas and carrots
- Add approximately 2 litres of water until food is covered
- Add rice and stir well and cover leaving on low heat
Tomato sauce
- Add onions, vinegar and tomatoes to a pan and simmer gently
- Add chilli powder and simmer for 30 minutes
Tomato salad
- Add finely sliced tomatoes to finely sliced onions
- Add sea salt and mix well
