Pilau rice with beef and spices

Treat yourself to a taste of Africa on a plate

Serves 10

Ingredients

  • 1½kg rice
  • 1kg beef
  • 1kg potatoes
  • 1kg tomatoes
  • 2 onions
  • 4 cloves garlic
  • 3 tbsp vinegar
  • 250g cumin seeds
  • handful black peppercorns
  • 10 cardamoms
  • 1 tbsp chilli powder (to taste)
  • ½kg peas
  • 2 large carrots

Method: 

  1. Fry the onions in hot oil until soft
  2. Add the beef that has been cut into cubes
  3. Crush the garlic with some sea salt in a pestle and mortar and add to the beef and leave to simmer for 15 – 20 minutes
  4. Add potatoes and mix well
  5. Crush spices (cumin, cardamoms, peppercorns) in a pestle and mortar and add to the saucepan and simmer further
  6. Add peas and carrots
  7. Add approximately 2 litres of water until food is covered
  8. Add rice and stir well and cover leaving on low heat

Tomato sauce

  1. Add onions, vinegar and tomatoes to a pan and simmer gently
  2. Add chilli powder and simmer for 30 minutes

Tomato salad

  1. Add finely sliced tomatoes to finely sliced onions
  2. Add sea salt and mix well
