Tuna steaks with crema verde

Ingredients
- 1kg fresh tuna steaks
Crema verde
- 1 cup fresh parsley leaves
- 1 cup fresh basil leaves
- 12 garlic cloves
- ½ cup olive oil
- ½ lemon, juice and zest
- Maldon salt and pepper
Method
- To make the crema verde, place all ingredients in a food processor and blend into a paste.
- Place a non-stick pan on a flame or on the BBQ.
- When the pan is sizzling hot, spread the crema verde onto directly onto the pan.
- Then place the steaks of tuna on top.
- Season with Maldon salt and pepper
- Allow to cook for 2 mins on each side. The tuna should be seared on the outside and raw on the inside.
- Serve withblack olives, capers, fresh basil and tomato sauce.
Tuna should be cut in thick steaks to avoid it drying out and overcooking
