Tuna steaks with crema verde

Ingredients

  • 1kg fresh tuna steaks 

Crema verde 

  • 1 cup fresh parsley leaves
  • 1 cup fresh basil leaves
  • 12 garlic cloves
  • ½ cup olive oil
  • ½ lemon, juice and zest
  • Maldon salt and pepper 

Method

  1. To make the crema verde, place all ingredients in a food processor and blend into a paste.
  2. Place a non-stick pan on a flame or on the BBQ.
  3. When the pan is sizzling hot, spread the crema verde onto directly onto the pan.
  4. Then place the steaks of tuna on top.
  5. Season with Maldon salt and pepper
  6. Allow to cook for 2 mins on each side. The tuna should be seared on the outside and raw on the inside. 
  7. Serve withblack olives, capers, fresh basil and tomato sauce.

Tuna should be cut in thick steaks to avoid it drying out and overcooking
