[WATCH] Peanut, Sausage and Bean Stew

There is nothing quite as warming as a good stew, and while the nights are still chilly, why not tuck into this one packed with local ingredients. Made with Maltese sausage, beans and peanut butter, this stew is fantastic served with crusty Maltese bread or brown rice.

 

Peanut, sausage and bean stew

Ingredients

  • Olive oil
  • 3 Maltese sausage
  • 1 onion
  • 4 cloves garlic
  • 50g ginger, minced
  • 50g fresh turmeric, minced (or 1 tsp ground)
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp cayenne pepper
  • 1 sweet potato, peeled and diced
  • 400g (1 large tin) kidney beans, rinsed
  • 200g French beans, roughly chopped
  • 1 litre chicken stock
  • 1 tbsp tomato purée (kunserva)
  • 2 tbsp peanut butter
  • 2 limes, juice only
  • Large handful coriander, chopped
  • Handful peanuts, to garnish
  • Salt and pepper

Method

  1. Slice the sausage into large chunks and fry in a little bit of olive oil in a deep saucepan for a few mins until browned.
  2. Remove from the saucepan and without cleaning add the onion and garlic and fry until soft.
  3. Add the turmeric, ginger and the spices and stir until combined.
  4. Add the sweet potato, kidney beans and French runner beans, mix and fry for around 30 seconds.
  5. Add the chicken stock and tomato paste and bring to the boil. Turn down the heat and allow to simmer for 20 mins until the potato is soft.
  6. Add the peanut butter and the lime juice and stir through.
  7. Remove from the heat and add the coriander.
  8. Serve in individual bowls and garnish with more coriander and some roasted peanuts.
