Recipe | Cauliflower bake

NFCS and Home Economics lecturer at the University of Malta Karen Mugliett, prepares a healthy recipe ideal for children.

This is a healthy recipe which I use for my own children when they come home from school as it is an ideal snack which can be prepared beforehand.  It is also a good way of giving them cauliflower or any other vegetable (e.g., marrows) in a way which they will probably like. They will then learn to accept the vegetable. It is so simple to make that children can also prepare it themselves and get it ready the evening before and can be taken to school or work as a packed lunch, especially in the winter months. My kids love this!

Ingredients

1 – 2 cauliflower, depending on the size, boiled beforehand

250g ricotta

1 tablespoon grated parmesan cheese

1 tablespoon mozarella (optional)

1 – 2 eggs, beaten

Parsley (optional)

1 slice smoked ham or back bacon (optional)

Salt and pepper to taste if desired

Method

1.     Cut the cauliflower into small pieces and boil and drain it

2.     In the meantime grease a pie dish with some margarine and if the bake is desired whole, line the pie dish with some baking paper which is siliconised

3.     Pre-heat the oven to 180 degrees Celsius

4.     Beat the ricotta in a food mixer well and then add all the other ingredients, e.g., cauliflower, the grated cheese, any of the other ingredients if using

5.     Add the beaten egg and mix well again

6.     Season with salt, pepper or parsley

7.     Spoon into the pie dish and smoothen out

8.     Bake in the oven for around 35 minutes

9.     When ready take out a decorate like a face if you have young children

10.  Slice and serve with a simple raw vegetable salad and some bread
