Spelt penne with sweet potato and parsley pesto

Mark Morales has a healthy answer to a comforting plate of pasta

Just because you eat healthy food doesn’t mean you have to forego comforting food like pasta, especially on a Monday! Spelt flour, wheat flour’s non-hybrid cousin, is packed with protein and fibre as well as simple and complex carbohydrates. Not only does it have a number of health benefits including lowering the risk or cardiovascular disease, regulating blood sugar and lessening the occurrence of migraines, the nutty flavour adds depth to your dish. So give in to your Monday cravings for comfort and make yourself a healthy heaping of indulgence

Ingredients

  • 500g spelt penne
  • 1 sweet potato
  • ½ green pepper
  • ½ red pepper
  • ½ yellow pepper
  • 1 marrow
  • 1 tbsp ghee
  • ½ pkt almond cream
  • Salt and pepper
  • Pinch nutmeg
  • Pinch garam masala
  • 5 tbsp parsley pesto

Parsley pesto

  • Large handful parsley, leaves and stalks
  • ½ cup oil
  • Handful walnuts
  • 1 tsp almond cream

Method

  1. To make the pesto put the ingredients into a blender and blend until smooth. Set aside.
  2. Saute the sweet potato, peppers and marrow in a pan with the ghee until tender.
  3. Add the almond cream, nutmeg, garam masala and salt and pepper.
  4. Boil the spelt pasta in salted water.
  5. Add the pasta to the sauce and then add the parsley pesto.
