[WATCH] Lemon ice cream

Everything is better when it is homemade. Watch Pippa Mattei make a simple homemade lemon ice cream that does not require fancy machines.

Lemon ice cream


  • 6 egg yolks
  • 100g caster sugar
  • 300ml fresh cream
  • 2 lemons, juice and zest


  1. Separate yolks from whites one at a time.
  2. Set whites aside and use for meringues.
  3. Grate the zest of the lemons and extract juice. Set aside.
  4. With an electric beater, beat yolks and sugar till thick.
  5. In a separate bowl whip cream lightly.
  6. Beat egg mixture and cream together then carefully fold in lemon rind and juice a little at a time, whipping in as you go along.
  7. When all is well blended put into a suitable container and freeze till firm.
  8. Serve with sponge fingers and any summer fruit.
