[WATCH] Poached figs in brandy

Watch Pippa Mattei make a simple summer dessert of local figs poached in brandy. 

Poached figs in brandy

Serves 4


  • 8-12 figs, carefully peeled and left whole
  • 4 tbsp water
  • 100g sugar
  • 4 tbsp brandy


  1. Dissolve sugar in water, bring to the boil and boil for 5 mins.
  2. Allow to cool slightly.
  3. Add figs to syrup. Heat to boiling point and simmer gently for 15 mins.
  4. Transfer to a serving dish and add the brandy while still warm. Chill thoroughly before serving. Serve with whipped fresh cream.
