Broccoli frittata

Baked frittatas are like overstuffed omelets that you don't have to worry about flipping... this one makes for a simple breakfast, brunch or dinner

Ingredients

  • 1 shallot
  • 1 head of broccoli
  • 6 eggs
  • 2tbsp olive oil 

Method

  1. Cut the broccoli florets off the main stem and place in a microwave safe bowl.
  2. Place a sheet of microwave proof cling film, pierce with a knife to allow steam to Escape.
  3. Place in the microwave and let it cook for 2 to 3 minutes on full power until broccoli is soft but still has a bit of resistance.
  4. Cut the shallot in small pieces and place in a pan with a couple of tablespoons of olive oil.
  5. Lightly sauté' the onion.
  6. Whisk together 6 eggs and season with salt.
  7. Add the broccoli to the onions, season with salt and cook together for a few minutes.
  8. Add the eggs and make sure the whole pan.
  9. Place the pan in the oven and cook at 180 degrees for 15 to 20 minutes.
  10. Allow to cool, then serve.
