Citrus tray bake

Citrus is in season and trees are bursting with oranges and lemons. In this tray bake, the orange and lemon flavours blend together to give the cake an overall citrus flavour, without one fruit dominating the other 



  • 225g caster sugar
  • 275g self-raising flour
  • 1tsp baking powder
  • 4 large eggs
  • 70ml milk
  • 1 orange
  • 1 lemon
  • 175g granulated sugar


  1. Pre-heat the oven to 160 degrees.
  2. Combine the caster sugar, self raising flour and baking powder.
  3. Add the milk and eggs to the dry mixture.
  4. Zest the lemon and the orange and add it to the mixture .
  5. Place the mixture in a tray and and bake for 30 – 40 minutes.
  6. While the mixture is baking, juice the zested citrus and add it to the sugar.
  7. Stir until the sugar is dissolved.
  8. Once the cake is ready, pour the mixture of sugar and juice over the cake and let it soak.
