Strawberry tart

Robert's simple strawberry tart recipe is the perfect dessert to make during strawberry season

Serves 1


Pastry cream filling

  • 240ml milk
  • 2tbsp sugar
  • pinch of salt
  • 2tbsp corn flour
  • 2 drops of vanilla
  • 2 large egg yolks
  • 1 whole egg
  • 21g unsalted butter


  1. Bring the milk to a boil and remove from heat.
  2. In a bowl, whisk the salt, corn flour, sugar and eggs until you achieve a smooth consistency.
  3. Add the mixture to the milk and simmer.
  4. Cook over medium heat, stirring constantly, until the cream has reached the desired density.
  5. Place the mixture in a tart shell or in a bowl.
  6. Decorate with local fresh strawberries.
  7. Place in fridge for 2 hours.
