Introducing Shakshouka... a flavourful dish with eggs poached in a tomato sauce with peppers, onion, garlic, and delicious spices


  • 2 medium sized onions
  • 2 cloves garlic
  • Small bunch coriander
  • 1 tin of tomatoes
  • Salt, to taste
  • 1tsp smoked paprika
  • 1tsp sweet paprika
  • 1tsp cumin
  • 4 medium sized eggs
  • 2 green peppers
  • 1tbsp tomato paste
  • 1 chili
  • 1tbsp olive oil


  1. Dice the onions, crush the garlic, chop the chili and dice the green peppers.
  2. Stem the coriander and chop finely.
  3. Heat a pan on a medium heat and add the olive oil.
  4. Place the chopped veg in the pan and begin to sweat them.
  5. Add the spice mix.
  6. Once the onion and veg have softened add the tomato paste.
  7. After a minute add the tin of tomatoes and half a tin of water.
  8. After about 10 minutes crack open the eggs and add them to the top of the sauce
  9. Place a lid and poach the eggs.
  10. Once the white has firmed up, yet the yolk is still runny remove from the heat and serve.
