[WATCH] How to fillet a fish

Filleting a fish can seem like a daunting task. You can ask your fishmonger to do it for you but with a bit of practice you can be filleting your own fish like a pro, with the added bonus of keeping the bones and heads for fish stocks. Sean Gravina shows you how. 

Filleting a fish

Ingredients

  • 1 white fish (lampuka)

Method

  1. Using a serrated knife, cut the head off the fish, through the spine.
  2. Run the knife along the backbone of the fish and remove the fillet avoiding the bony bits, right through to the stomach.
  3. Place the fillet on the board, skin side down.
  4. Remove any bones that may remain as well as any dark bits of meat as they create a bitter taste.
  5. Turn the fish over and remove the other fillet.
