Cleaning calamari

You will need

  • Calamari
  • Butter knife

Method

  1. Pull the head just below the eyes upwards, removing the ink sac intact. Bursting the ink sac will result in a very black kitchen.
  2. Remove the beak from the head and cut the tentacles to the desired length.
  3. Peel the skin by pinching just below the wing and pulling back. The skin should pull away in one piece.
  4. Pull the ‘back bone’ and cut the body into rings or cut in half and score with a butter knife.
