[WATCH] How to make beurre noisette

Watch Sean Gravina make a simple beurre noisette, which can be used in pastries, chicken and fish dishes as well as on warm vegetables and in pasta dishes. Beurre noisette, literally translated into hazelnut butter or more commonly brown butter has a nutty flavour adding complexity to simple dishes.

Buerre noisette

You will need

  • Unsalted butter
  • Heavy based pan

Method

  1. Place the butter in a heavy based pan and on a medium heat till the fat in the butter starts to caramelise, don’t cook it to a very dark colour cause it will taste bitter or get burnt.
  2. When it reaches the desired colour pour in a cool bowl to stop the cooking process.
  3. Use this simple butter with warm vegetables, chicken dishes, fish dishes or on pasta.
