Béchamel  

Ingredients

  • 5 tbsp butter
  • 4 tbsp plain flour
  • 4 cups Benna whole milk
  • 2 tsp salt
  • 1 clove garlic
  • ¼ small onion
  • 1 bay leaf
  • 1 tsp mustard

Method

  1. Start the béchamel by melting the butter in a small saucepan.
  2. Add the flour and cook on a medium heat, stirring all the time, for about 2 mins. Make sure the mix doesn’t brown much.
  3. Slowly add the milk to the saucepan as you whisk.
  4. Smash the clove of garlic and add it to the saucepan along with the salt, garlic, onion and bay leaf.
  5. Keep cooking and whisking on a low heat for about 10 mins or until sauce is thick and creamy.
  6. Stir in the mustard and use immediately.
