Homemade vegetable stock

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 1 medium carrot, sliced
  • 4 celery sticks, sliced
  • 1 large carrot, sliced
  • 5 thyme sprigs
  • 2 bay leaves
  • Parsley
  • 1.2l water

Method

  1. Pour the olive oil into a large pot and heat.
  2. Add the onions, celery and carrot and sauté on a medium heat for about 5 mins; you want to soften them but not add colour.
  3. When soft, add the thyme, bay leaves and parsley and cover with water.
  4. Bring to a boil and simmer for 30 mins.
