Almond raisin granola

Cereal is a great go to meal for breakfast in the morning, especially if you are short of time. Supermarket brands, however, are packed with sugar – even the ones you think are healthy! Sean Gravina makes easy granola so that you know exactly what is going into your body. 

Almond raisin granola

Serves 8

Ingredients

  • 3 cups quick or old-fashioned oats
  • 1 cup slivered almonds
  • 1 cup golden raisins
  • ¾ cup shredded coconut
  • 1/3 cup sesame seeds
  • ¼ cup coconut oil
  • 6 tbsp pure maple syrup
  • 6 tbsp packed brown sugar
  • 2 tbsp HOT water
  • ¾ tsp cinnamon
  • ¾ tsp salt
  • Vegetable or canola cooking spray
  • Fresh milk to serve

Method

  1. Preheat oven to 250C.
  2. Coat a large, rimmed baking sheet lightly with cooking spray.
  3. In a large bowl, toss oats with the almonds, coconut and sesame seeds.
  4. In a small bowl, stir the syrup, brown sugar, oil, cinnamon and salt together with the water until well blended.
  5. Pour wet mixture over oat mixture and stir to combine.
  6. Spread combined mixture evenly over the prepared baking sheet.
  7. Stirring occasionally, bake 1 hour and 15 minutes or until evenly browned.
  8. Remove from oven and allow to cool. Mix in the raisins.
  9. Great with milk for morning cereal.

Stores well for two weeks in an airtight container.

It takes less than 90 minutes to make the whole thing and then you have fresh homemade cereal for the week.
