Roasted strawberries 'n' cream popsicles
Strawberries and cream are simply delicious. Roasted strawberries in balsamic vinegar topped with cream give you a little extra richness. And in this heat why not put them on a stick and freeze them? Whether you're serving these as an after dinner treat at a dinner party or for that naughty mid-afternoon snack, these popsicles are delightful
Makes 8 ice lollies
Ingredients
- 1 punnet fresh strawberries
- 4 tbsp balsamic vinegar
- 1 tbsp maple syrup
- ½ tsp salt
- 2 tubs fresh cream
Method
- Preheat the oven to 180°C.
- Halve the strawberries and place in a single layer on a baking tray lined with baking paper.
- Drizzle over the balsamic vinegar and roast until soft and fragrant (approx. 20 mins).
- Allow to cool in the pan for 10 mins before transferring to a separate bowl.
- Add the maple syrup and the salt and mash with a fork leaving some chunks of fruit.
- Allow to cool to room temperature.
- Place a tablespoon of fruit into the bottom of the mould.
- Layer with fresh cream and more fruit.
- Freeze until set (approx) 4 hours.
- To remove from the mould, place in warm water for 5 seconds before sliding out of the mould.
- Serve immediately.
